How to prepare your mate.

Fill your gourd
Fill the gourd about 2/3 full with dry yerba mate. Leave enough room for the water to circulate.
Tilt and settle
Cover the opening with your hand, flip upside down and shake gently. Tilt the gourd so the mate forms a slope — this protects the bombilla filter from clogging.
Insert the bombilla
Insert the bombilla at a 45° angle into the lower side of the mate mound. Don't move it once placed — repositioning stirs up fines and clogs the filter.
Add cool water first
Pour a small amount of cool or room-temperature water at the base of the mound. This pre-wets the leaves and protects them from scorching.
Pour hot water and sip
Add hot water (75–80°C) into the space beside the bombilla. Let it steep 30 seconds, then sip slowly through the bombilla. Refill with hot water as you drink — a single portion yields 8–12 gourds.
Never use boiling water — it scorches the leaves and bitters the flavor. 75–80°C (165–175°F) is ideal. If you don't have a thermometer, boil and let rest for 2–3 minutes.

Yerba mate (Ilex paraguariensis) is a native South American plant whose leaves have been harvested and steeped for centuries. Long before it was trendy, it was simply how people started their mornings — shared from a single gourd, passed in a circle.
Unlike coffee, which delivers a sharp hit of caffeine, mate combines caffeine with theobromine (the compound in dark chocolate) and theophylline. The result is a sustained, focused energy — more plateau than spike.
